Ingredients:
- 3 lbs Autumn’s Harvest Chuck Roast
- 4 large carrots, chopped
- 3 medium potatoes, cubed
- 1 large onion, sliced
- 3 cups beef broth
- 2 tbsp tomato paste
- 2 tsp fresh thyme (or 1 tsp dried)
- Salt and pepper to taste
Instructions:
- 1. Season the chuck roast generously with salt and pepper. Sear on all sides in a hot skillet.
- 2. In a slow cooker, layer vegetables, then place the roast on top.
- 3. Mix beef broth, tomato paste, and thyme; pour over the roast.
