Directions

1. Slow-Cooked Chuck Roast with Root Vegetables

Ingredients:

  • 3 lbs Autumn’s Harvest Chuck Roast
  • 4 large carrots, chopped
  • 3 medium potatoes, cubed
  • 1 large onion, sliced
  • 3 cups beef broth
  • 2 tbsp tomato paste
  • 2 tsp fresh thyme (or 1 tsp dried)
  • Salt and pepper to taste

Instructions:

  1. 1. Season the chuck roast generously with salt and pepper. Sear on all sides in a hot skillet.
  2. 2. In a slow cooker, layer vegetables, then place the roast on top.
  3. 3. Mix beef broth, tomato paste, and thyme; pour over the roast.
  4. 4. Cook on low for 8 hours (or high for 4-5 hours) until tender.
