Hearty Beef Stew with Root Veggies
Using our grass-fed, grass-finished beef stew meat
Ingredients:
- 1 lb beef stew meat
- 3 carrots, peeled and chopped
- 3 potatoes, cubed
- 1 cup butternut squash, cubed
- 2 cups baby spinach
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tbsp fresh thyme (or 1 tsp dried thyme)
- Salt and pepper to taste
Instructions:
- Add beef stew meat, carrots, potatoes, squash, onion, and garlic to the crockpot.
- Pour in the beef broth and Worcestershire sauce, then sprinkle with thyme, salt, and pepper.
- Cover and cook on low for 7-8 hours or until the meat is tender.
- In the last 30 minutes of cooking, add spinach and let it wilt.
- Serve with crusty bread for the ultimate comfort meal. Enjoy the flavors of fall!
