Hearty Beef Stew with Root Veggies
Slow-cooked beef stew with carrots, potatoes, and butternut squash for a rich, tender, and warming meal. Perfect served with crusty bread!

Hearty Beef Stew with Root Veggies

Using our grass-fed, grass-finished beef stew meat

Ingredients:

  • 1 lb beef stew meat
  • 3 carrots, peeled and chopped
  • 3 potatoes, cubed
  • 1 cup butternut squash, cubed
  • 2 cups baby spinach
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tbsp fresh thyme (or 1 tsp dried thyme)
  • Salt and pepper to taste

Instructions:

  1. Add beef stew meat, carrots, potatoes, squash, onion, and garlic to the crockpot.
  2. Pour in the beef broth and Worcestershire sauce, then sprinkle with thyme, salt, and pepper.
  3. Cover and cook on low for 7-8 hours or until the meat is tender.
  4. In the last 30 minutes of cooking, add spinach and let it wilt.
  5. Serve with crusty bread for the ultimate comfort meal. Enjoy the flavors of fall!
