Savory Chicken and Harvest Vegetable Soup
Featuring our pasture-raised whole chicken or chicken thighs
Ingredients:
- 1.5 lbs bone-in, skinless chicken thighs (or half a whole chicken)
- 2 sweet potatoes, cubed
- 3 parsnips, chopped
- 1 cup diced pumpkin or acorn squash
- 1 leek, sliced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 2 bay leaves
- 1 tsp fresh rosemary, chopped (or 1/2 tsp dried)
- Salt and pepper to taste
Instructions:
- Place chicken, sweet potatoes, parsnips, pumpkin, leek, and garlic in the crockpot.
- Add chicken broth, bay leaves, rosemary, salt, and pepper.
- Cover and cook on low for 6-7 hours, until chicken is tender.
- Remove chicken, shred the meat, and return to the soup. Remove bay leaves before serving.
- Ladle into bowls and garnish with a sprinkle of fresh parsley. Perfect for those crisp fall evenings!
