Savory Chicken and Harvest Vegetable Soup
A comforting chicken soup packed with sweet potatoes, parsnips, and pumpkin. Light yet hearty, ideal for chilly nights!

Savory Chicken and Harvest Vegetable Soup

Featuring our pasture-raised whole chicken or chicken thighs

Ingredients:

  • 1.5 lbs bone-in, skinless chicken thighs (or half a whole chicken)
  • 2 sweet potatoes, cubed
  • 3 parsnips, chopped
  • 1 cup diced pumpkin or acorn squash
  • 1 leek, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 2 bay leaves
  • 1 tsp fresh rosemary, chopped (or 1/2 tsp dried)
  • Salt and pepper to taste

Instructions:

  1. Place chicken, sweet potatoes, parsnips, pumpkin, leek, and garlic in the crockpot.
  2. Add chicken broth, bay leaves, rosemary, salt, and pepper.
  3. Cover and cook on low for 6-7 hours, until chicken is tender.
  4. Remove chicken, shred the meat, and return to the soup. Remove bay leaves before serving.
  5. Ladle into bowls and garnish with a sprinkle of fresh parsley. Perfect for those crisp fall evenings!
