BBQ-Smoked Beef Brisket:

Ingredients:

  • 4-5 lbs Beef Brisket
  • 2 tablespoons kosher salt
  • 2 tablespoons black pepper
  • 2 tablespoons smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon brown sugar
  • 1 teaspoon cayenne pepper (adjust to taste)
  • 1 cup beef broth
  • For BBQ Sauce:
    • 1 cup ketchup
    • 1/2 cup brown sugar
    • 1/4 cup apple cider vinegar
    • 2 tablespoons Worcestershire sauce
    • 1 tablespoon Dijon mustard
    • Salt and pepper to taste

Instructions:

  1. Prepare the Brisket: Pat the brisket dry with paper towels. In a bowl, mix salt, pepper, smoked paprika, garlic powder, onion powder, brown sugar, and cayenne pepper to create a dry rub. Rub the mixture generously over the brisket, covering all sides. Let it sit at room temperature for about 30 minutes.
  2. Preheat the Smoker or Oven: Preheat your smoker or oven to 225°F (107°C).
  3. Smoke or Roast: Place the brisket on the smoker grates or in a roasting pan in the oven. Smoke or roast for about 1.5 to 2 hours per pound, or until the internal temperature reaches 195-205°F (91-96°C).
  4. Wrap in Foil: When the brisket reaches an internal temperature of around 165°F (74°C), wrap it tightly in foil. This helps retain moisture during the remainder of the cooking process.
  5. Continue Cooking: Place the wrapped brisket back in the smoker or oven until it reaches the desired internal temperature.
  6. Resting Period: Allow the brisket to rest in the foil for at least 30 minutes. This step is crucial for retaining juices and ensuring tenderness.
  7. Prepare BBQ Sauce: While the brisket is resting, combine all BBQ sauce ingredients in a saucepan. Simmer over low heat for 10-15 minutes, stirring occasionally.
  8. Slice and Serve: Unwrap the brisket, slice against the grain, and serve with a drizzle of the homemade BBQ sauce.
