Directions

Sarah's Signature Pork Tenderloin

Ingredients:

1 pork tenderloin (about 1 to 1.5 pounds)

2 cloves garlic, minced

2 tablespoons olive oil

2 tablespoons soy sauce

2 tablespoons honey

1 tablespoon Dijon mustard

1 teaspoon dried thyme

Salt and black pepper to taste

Optional: chopped fresh herbs for garnish (parsley, thyme, or rosemary)

Instructions:

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Pork Tenderloin:  Pat it dry with paper towels.

Make the Marinade: In a small bowl, whisk together minced garlic, olive oil, soy sauce, honey, Dijon mustard, dried thyme, salt, and black pepper until well combined. Reserve enough marinade to baste pork before going into oven. 

Marinate the Pork: Place the pork tenderloin in a shallow dish or a resealable plastic bag. Pour most of the marinade over the pork, making sure it's evenly coated. Allow the pork to marinate for at least 30 minutes at room temperature, or for best results, marinate it in the refrigerator for 2 to 4 hours, or overnight.

Sear the Pork: Heat a large oven-safe skillet over medium-high heat. Once hot, add a drizzle of olive oil to the skillet. Remove the pork from the marinade and sear it on all sides until browned, about 2-3 minutes per side.

Roast the Pork: After searing, Baste pork with your reserved marinade, transfer the skillet with the pork to the preheated oven. Roast the pork for 15-20 minutes, or until it reaches an internal temperature of 145°F (63°C) for medium doneness, or adjust the cooking time according to your preferred level of doneness.

Rest and Serve: Once cooked to your desired doneness, remove the skillet from the oven and transfer the pork to a cutting board. Tent it loosely with foil and let it rest for 5-10 minutes. This allows the juices to redistribute, ensuring a juicy and tender pork tenderloin.

Slice and Serve: After resting, slice the pork tenderloin into ½-inch thick slices. Arrange the slices on a serving platter, drizzle with the reserved marinade, and garnish with chopped fresh herbs if desired. Serve hot and enjoy!
