Autumn's Harvest Farm Pork Tenderloin Recipe
Ingredients:
1 Autumn's Harvest Farm pork tenderloin
2 cloves garlic, minced
2 tablespoons olive oil
2 tablespoons balsamic vinegar
1 tablespoon Dijon mustard
1 teaspoon honey
Salt and pepper to taste
Fresh herbs for garnish (optional)
Instructions:
Prepare the Pork Tenderloin:
Preheat your oven to 400°F (200°C).
Place the pork tenderloin on a clean cutting board. Pat it dry with paper towels to remove any excess moisture.
Season the tenderloin generously with salt and pepper on all sides.
Make the Marinade:
In a small bowl, whisk together minced garlic, olive oil, balsamic vinegar, Dijon mustard, and honey until well combined.
Marinate the Pork:
Place the pork tenderloin in a shallow dish or a resealable plastic bag.
Pour the marinade over the pork, ensuring it is evenly coated. Massage the marinade into the meat.
Cover the dish or seal the bag and refrigerate for at least 30 minutes, or ideally, marinate overnight for maximum flavor.
Cook the Pork Tenderloin:
Heat a large oven-safe skillet over medium-high heat. Add a drizzle of olive oil to the skillet.
Once the skillet is hot, carefully place the pork tenderloin in the pan. Sear it for 2-3 minutes on each side until nicely browned.
Transfer the skillet to the preheated oven and roast the pork tenderloin for about 15-20 minutes, or until it reaches an internal temperature of 145°F (63°C) for medium-rare or 160°F (71°C) for medium, using a meat thermometer inserted into the thickest part of the meat.
Remove the skillet from the oven and transfer the pork tenderloin to a cutting board. Tent it loosely with foil and let it rest for 5-10 minutes. This allows the juices to redistribute and ensures a juicy tenderloin.
Slice and Serve:
After resting, slice the pork tenderloin into medallions, about ½ to ¾ inch thick, against the grain for maximum tenderness.
Arrange the slices on a serving platter and drizzle any remaining juices from the skillet over the top.
Garnish with fresh herbs if desired, such as chopped parsley or thyme.
